For your Guided Tour of the Dairy, Cavallottitravel chose a farm producing organic Parmigiano Reggiano cheese since 1994.
The production is based on a closed-cycle, from the farmlands cultivation to the handling of a herd of more than 500 cows in the organic system, certified by institutes CSQA and ICEA under the “Organically Farmed” standard.
The Guided Tour at the Dairy farm will reveal the various phases of production of Parmigiano Reggiano.
You can watch the production of cheese: the boiling milk, coagulation, curd and breaking of the processing.
